Superfood Guacamole Recipe

This superfood guacamole recipe is an easy and delicious way to increase the amount of healthy fat you in your diet. We created this guacamole recipe for clients wanting an easy and tasty way to eat more healthy fat with some small changes to increase the superfood power of traditional guacamole recipes. What do you need

Two Large RIPE Avocados
Juice of one large lemon or two limes
Tablespoon of MCT Oil or melted coconut oil
One Tomato Finely chopped
Two spring onions finely chopped
One medium garlic clove crushed
Pink himalayan sea salt to taste (1/2 tsp for us)
Handful of chopped coriander 

What to do

1. Finely chop tomato, spring onion, corriander, and crush garlic. Place in a bowl and sprinkle salt over the top.

2. Mash avocados in a pestle and mortar or in a bowl with a fork and pour lemon or lime juice over. (This stops the avocados going brown) Add the garlic and mct/coconut oil to the mashed avocados. If you want a creamier guacamole you can also mash the onions and corriander, but this depends how rustic you want your guacamole to be, so experiment! We like to mash the onions and half of the coriander and add the rest at the end. 

3. Once you have a consistency you are happy with combine all the ingredients together in a bowl and 1/4 finely chopped chilli (optional) and thats it! 

This guacamole recipe is easy as 1,2,3 so there is no excuse not to increase the amount of healthy fat you are eating in your diet. Superfood ingredients like avocado, MCT oil, lemon, and pink himalayan sea salt are great for improved health, brain function, and even weight loss. Use it as a superfood replacement for processed guacamole for chip and dip or as a side to a spicy low carb meal.
