This peanut butter protein flapjack recipe is one of my favourite on the go snacks these days when im busy working with clients and want a clean, healthy, and nutritionally balanced meal. They are easy to make, absolutely delicious, and take about 15 minutes in total.
-250g of Porridge oats (I like gluten free but its up to you)
-120g of chocolate protein powder
-3 Tablespoons Peanut Butter
-100-200ml Almond milk (or more to make a wetter mix)
-1 tablespoon organic cocoa powder
-1 teaspoon of Stevia
What you do:
Preheat your oven at gas mark 6. Blend 200g of the porridge oats to create a finer oat (or buy ground oats) and combine the 200g ground, 50g normal oats, cocoa powder, and stevia in a large mixing bowl
In a small saucepan over the lowest heat you have melt 2 tablespoons of the peanut butter and pour in to the dry ingredients and mix thoroughly until you have a crumb like texture. Use some coconut oil or butter to grease a small loaf or baking tin.
Add almond milk and mix until you have a wet and sticky mix that you can just about handle. Transfer this to your tin and push in to the corners (wet your hands if you are having trouble handling the wet mix.
Put in the oven on the middle shelf for 10-12 minutes turning the tin half way through to make sure it is evenly cooked. Remove from the oven and tip out of the tin, dont worry if the 'cake' seems a bit soft, give it 10-15 minutes before cutting and it should be great.
Once the flapjack block is cool spread the last tablespoon of peanut butter over the top and place in the fridge for 15 minutes. You are now ready to slice your delicious peanut butter protein flapjacks!
